carrot, coconut and chocolate layered mini cake bites
Recipe:
Chocolate topping;
Coconut Layer;
Carrot Layer
Whip the chocolate ingredients together til creamy, set aside.
Coconut layer:
Grind the raisins and coconut plus the fresh ginger
then in a different container mix all the coconut ingredients til its sticky then set aside
Carrot Layer:
For the carrot layer squeeze the juice out of the grated coconut or you can use a juicer to extract the juice and drink it Yum!!!
Grind the raisins and coconut plus the fresh ginger, then in a different container mix all the ingredients til they are sticky and hold together (feel free to lick your fingers) Lol!
Making the layers
Start with the carrot layer coz it holds good and is stable, firmly mould it into a desired shape or use a cake container, then add the coconut layer… whip the chocolate cream again til soft and dripping (so that it doesn't stick to the coconut layer) and spread on top of the coconut put in the fridge for about an hour or leave on a cool dry place to harden.
Cut into desired shapes and serve ooooooh gooooodnesssss!!!
P.S it tastes like real carrot cake

- 1 tablespoon of organic coconut oil (preferably raw too)
- 1-2 tablespoons of honey (any sweetener of your choice)
- Pinch of sea/Himalayan salt

- 1 cup grated/desiccated coconut or fresh and dessicate using a grinder
- ½ cup of dried raisins
- 1 tablespoon coconut oil
